Before I realised I was pregnant, I went on a total health detox. This was something I ate constantly for two weeks over lunch breaks. I even treated myself with this brunch item on a slow Saturday morning with a Matcha latte, finding myself satisfyingly energised until 3pm for an afternoon snack before dinner. It requires little preparation, especially if you're in a rush on your lunch break, containing healthy fats. It made life so much easier!

Ingredients
Avocado or Sunflower oil | 2 tbs Pesto Sauce (Red or Green) | Chilli Flakes | Salt | Pepper | 2 slices Wholegrain Bread | 1 Avocado | 2 Free Range Eggs | 4 slices of Prosciutto
Method
Fire up the stove with some oil in a non-stick pan
Crack a free range egg or two inside. Fry for 3-4 minutes.
Toast the bread to one's standards. You can alternatively add some oil to the bread & fry in the frying pan with the eggs.
Once the bread is at an ample hue to one's taste, place it on a plate. Evenly spread pesto sauce across the top of each piece of bread.
Slice some Avocado into a bowl with some salt, pepper & chilli flakes (if you're feeling up to the challenge)
Take some Prosciutto & layer it across the top.
Add the egg on top of the ham
